Willkie served as financing counsel to Platinum Equity and its portfolio company Rise Baking Company in connection with the acquisition of Jimmy's Gourmet Bakery, a manufacturer of premium cookies and baked goods.
Rise Baking Company, a leading manufacturer for in-store bakeries and foodservice operators, recently announced that it completed its acquisition of Jimmy's Gourmet Bakery, further strengthening its position in the cookie category while expanding its manufacturing capabilities in the Northeast.
Willkie previously advised Platinum Equity and Butterfly on financing for their joint acquisition of Rise Baking Company in 2024.
